I own several UK properties and pay tax as a non-UK resident. So far, all are in my sole name, and I use my personal allowance to offset liabilities. Is there an income tax advantage to buying with my wife as a partner or changing the existing properties to partner ownership?

If your wife is eligible to a UK personal allowance for income tax then certainly there is an advantage in owning UK properties together with her, because the overall UK income tax liability will be reduced.
